Grapefruit yogurt cake

I know she's been around and a respected food blogger for a long time, but I have only recently started reading Deb Perelman's smittenkitchen.com and I love it.

Deb has such a store of recipes on her site that I shouldn't have been surprised she had a bunch using grapefruit. The grapefruit yogurt cake took my fancy - two birds with one stone as I had tubs of yogurt in the fridge as well as tumbling grapefruit off the kitchen bench as my month of citrus madness continues.

It doesn't stand a chance though and has been devoured by hoards of sweet-tooths before the icing is even set. Thinking I could outsmart my kitchen-raiders I decided to soak a grapefruit syrup over the still-warm cake after it had finished cooking hoping that most people wouldn't like the stronger flavour of a grapefruit syrup but alas, I was mistaken. They loved the sticky topping even more so I need to just give up any idea of having any baking in tins ready for visitors and you're just going to have to bring your own when you drop 'round!

To bake this cake, the oven needs to be preheated to 180°C for this one. I like to butter and flour a loaf tin before I start doing anything else so I'm good to go as soon as the batter is done. Beat yogurt, sugar, eggs, grapefruit zest, and vanilla in a mixing bowl. Add the sifted, dry ingredients, and mix in gently - once the dry ingredients are incorporated into the wet mix, swap your beater for a rubber spatula and fold in the vegetable oil. When it's all mixed, pour the batter into the loaf pan you prepared earlier and pop into the oven.

The cake needs to bake for about 50 minutes. Test with a skewer (it should come out clean) to see that the cake is done.
