Anzac Biscuits

125g (4ozs) flour
100g (3.5 oz) butter
150g (6ozs) sugar
1 tablespoon Golden Syrup*
1 cup Coconut
1/2 tsp Bicarbonate of Soda
1 cup Rolled Oats
2 tbsp Boiling Water

Mix together flour, sugar, coconut and rolled oats.
Melt butter and golden syrup.
Dissolve Bicarbonate of Soda in the boiling water and add to butter and golden syrup.
Make a well in the centre of the flour and add the liquid
Place spoonsful on greased trays.
Bake 15-20 minutes at 180C (350F).

Banana Cake

125g (4oz) butter
175g (6oz) sugar
2 eggs
2 mashed bananas
1 tsp. Bicarb Soda
2 tbsp. boiling milk
1 tsp. Edmonds Baking Powder
225g (8oz) Flour

Cream butter and sugar, add eggs, mashed bananas, then Bicarb Soda dissolved in boiling milk. Lastly, add flour and baking powder previously mixed. Bake in two greased sandwich tins for 20 minutes at 180°C (350° F). Fill with whipped cream and sliced bananas

 

Yo Yoes

175g (6oz) butter
50g (2oz) icing sugar
Vanilla Essence (few drops)
175g (6oz) Flour
50g (2oz) Edmonds Custard Powder

Cream butter and sugar, add essence, then dry ingredients. roll into balls and flatten on a greased tray with the back of a fork. Bake 20 minutes 180°C (350° F). When cold, put together with Butter Filling: soften 1 tbsp. butter, about 6 tbsp. icing sugar, 1 tbsp. Edmonds Custard Powder.
